Manchmal muss es einfach ein Klassiker sein!\u00a0Und Schnitzel finde ich einfach unwiderstehlich. Im Grunde genommen ist es auch nicht schwer zu machen. Das Panieren ist etwas aufwendiger und bei mir ger\u00e4t dabei immer irgendwie die K\u00fcche in ein totales Chaos, aber es lohnt sich auf alle F\u00e4lle. Grundlage ist nat\u00fcrlich ein tolles echtes Kalbsschnitzel, sch\u00f6n d\u00fcnn geschnitten und eventuell noch geklopft. Wichtig beim Panieren: Erst das Fleisch w\u00fcrzen, dann in Mehl wenden, dann in Ei tauchen und am Ende die Semmelbr\u00f6sel. Im Fernsehen habe ich von einem Sternekoch geh\u00f6rt, dass sich die Panade bei einem guten Schnitzel in Blasen vom Fleisch l\u00f6sen soll. Zum Braten verwende ich ausreichend Butterschmalz und gebe gerne noch ein klein wenig echte Butter hinzu.<br \/>\nAls Beilage habe ich einen lauwarmen Kartoffel-Gurkensalat gew\u00e4hlt. Dieser wird mit einer Mischung aus Br\u00fche und einem klassischem Essig-\u00d6l-Dressing angemacht.
