Es duftet im Haus – nach W\u00e4rme, Brot, Oliven. Ist es nicht wunderbar das eigene Brot zu backen? Ich finde es urgem\u00fctlich, daher backe ich gerade im Herbst gerne selbst Brot. Und stelle dabei jedes Mal wieder fest, wie einfach es ist und dass ich es \u00f6fter machen sollte. F\u00fcr ein sch\u00f6nes Abendessen mit Freunden (siehe hier)<\/a> wollte ich eine neue Brot-Variante ausprobieren und habe mich f\u00fcr ein Dinkelbrot mit Walln\u00fcssen und Oliven entschieden.
\nDie Kombination war einfach toll! Durch die Oliven ist das Brot sch\u00f6n saftig, die Walln\u00fcsse geben einen tolles Aroma und zus\u00e4tzlich sind noch Fenchelsamen dabei. Wenn man es lauwarm mit etwas Oliven\u00f6l und Salz dippt, kann man gar nicht mehr aufh\u00f6ren davon zu naschen. Und schon muss man wirklich aufpassen, dass man sich nicht schon an dem Brot total satt isst.\"Brot\"Brot<\/p>\n

F\u00fcr das Wallnuss-Oliven Brot mischt man zun\u00e4chst das Mehl mit dem Fenchel und Salz (etwa 1 TL). Die Hefe habe ich in 280ml lauwarmen Wasser aufgel\u00f6st und Essig und \u00d6l zugef\u00fcgt. Diese Mischung wird nun mit dem Mehl verknetet. Jetzt ist erstmal Pause angesagt, denn man muss den Teig gehen lassen, also an einen warmen, zugfreien Ort stellen (am besten abgedeckt) und dort etwa 6 Stunden ruhen lassen. Danach kann man die Walln\u00fcsse und Oliven unterkneten, den Brotlaib formen und leicht mit Mehl best\u00e4uben. Auf das Backblech (mit Backpapier) legen und abgedeckt erneut 60 Minuten gehen lassen. Schlie\u00dflich habe ich das Brot im vorgeheizten Backofen bei 220 Grad f\u00fcr 35 Minuten gebacken. Ich stelle bei allen Broten immer eine Tasse Wasser mit in den Backofen, damit die Luftfeuchtigkeit stimmt. Ich bin mir aber nicht sicher, ob das wirklich was bringt.
